Founded in May 2023, Fogo Fungi began as Ong’s answer to a question few in Singapore had asked: could mushrooms be grown locally, and grown well enough to rival imports? He wanted to create a steady, small-scale supply of gourmet fungi that chefs could trust; these are cherished mushrooms that are cultivated here, under controlled conditions, yet boast the same sensitivity found in nature.
